Guilt-Free Mashed Potatoes and Gravy

I love mashed potatoes! They are one of my favorite sides to eat at Thanksgiving. This year, I decided to try to make a healthier version and make it vegan. They turned out awesome! These potatoes are creamy, delicious, and have a great depth of flavor. Try these potatoes next week for a healthier twist on the holiday favorite.
