Healthy Banana Pancakes: Only 4 Ingredients

Pancakes are a weekend classic. They’re sweet, fluffy, and delicious, plus they’re the only food acceptable to smother in maple syrup. Ah… if only there was a healthier version that was also easier and quicker to make and required way less cleanup afterwards.

Wait a minute, there is, this one!

This awesome recipe requires just 4 natural ingredients. Yep FOUR. And it tastes just as good as the regular kind, if not better. Plus they’re paleo, grain-free, gluten-free, artificial sweetener-free, and won’t leave you with that too-full-to-do-anything feeling afterwards. They’re the light and refreshing version of pancakes that are healthier because they’re made with whole foods, and the lack of grains makes them easier to digest, thereby leaving with you with plenty of energy to start your day.

Ready to make some banana pancakes? Here we go!

What you’ll need:
(serves 2)
– 2 small/medium overripe bananas
– 4 large organic eggs
– Cinnamon
– Coconut oil or ghee (butter or bone broth fat would also work)

How to work it:

1.  Mash up your bananas in a bowl. Mash mash mash. No big chunks.

2.  Add your eggs and a reasonable sprinkle of cinnamon. If you like, toss in a splash of vanilla extract as a bonus.

3.  Mix it up till you have a batter.

4.  Heat a pan, add your oil or fat of choice, and add the batter like you would for regular pancakes. Aim for these to be about the size of the palm of your hand.

If you have enough oil then they shouldn’t stick to the pan AT ALL, woo-hoo! Once you’ve used up all the batter, serve and enjoy. You can eat them plain, or dress them up however you like. They’re pretty sweet so no maple syrup is needed in my opinion, but a little fruit is a nice addition.
