Healthy Shamrock Shake

In honor of St. Patrick’s Day, I wanted to create something creamy and green like McDonald’s Shamrock Shake. They always look so festive and delicious! I even woke up craving a milkshake, which is super weird for me. I’ve never really enjoyed ice cream, milkshakes or anything in that family so this was a new experience. I present to you my newest creation, the Healthy Shamrock Shake.

I knew I had to go to the grocery store to pick up a few ingredients since I haven’t bought vegan frozen dessert before. I picked up some frozen coconut milk ice cream, avocado, mint extract and fresh mint, hoping that these ingredients would come together into a mouthwatering milkshake-style drink. Luckily, it all came together wonderfully!

Healthy Shamrock Ingredients

Makes two 8-oz Servings
¾ c unsweetened vanilla almond milk
¾ c So Delicious Vanilla Bean Coconut Milk Frozen Dessert
5 drops NuNaturals Liquid Vanilla Stevia
¼ tsp mint extract
1 c ice cubes
½ tbsp coconut oil
2 oz unsweetened baking chocolate
½ tbsp coconut sugar
1 packet stevia

Instructions

Add almond milk, frozen dessert, stevia, mint extract and ice cubes to a high speed blender in the order listed.
Blend on medium-low speed until smooth and creamy, about 3 minutes.
Pour into two small glasses and set aside.
Create a double boiler on the stove by putting a small amount of water in a small sauce pan and bring to a boil.
Place a glass bowl on top, which is where you will place all ingredients.
Once water is boiling, place coconut oil in glass bowl and stir until melted.
Add in chocolate and stir until completely melted and blended with coconut oil.
Stir in coconut sugar and stevia and mix all ingredients until smooth.
Mix 1 tbsp of chocolate sauce into shake and enjoy!
