Quick and Easy Protein Pancakes

Protein pancakes have become a popular breakfast trend—not only are they featured in endless pictures on Instagram, but they are also reinventing the typical nutritional composition of a pancake. I’ve tried my fair share of pancakes, and finally found one that’s worth sticking with. This go-to pancake recipe ditches the artificial flavors and protein powders, all while providing a nutritionally balanced and delicious meal. These pancakes will satisfy your cravings and make your stomach happy. Not only will they taste great, but they’ll also be ready in a flash!

Single serving recipe:

Ingredients
1/3 cup oats
1/3 cup cottage cheese
2 egg whites or 1 egg
Cooking spray
Optional add-ins: vanilla, cinnamon, honey, and/or fruit

Instructions
Combine ingredients in a blender.
Blend until smooth.
Coat a non-stick skillet with cooking spray of choice.
Cook pancakes on medium heat.
Flip pancakes when they start to bubble.
Add toppings and enjoy!

Looking for an extra nutritional punch? Try adding plain Greek yogurt, nut butter and/ or fruit on top. The topping combinations are endless!
