Simple Salad: Roasted Shrimp and Arugula

When we’re craving something light, fresh and healthy, we always go to this simple salad recipe: Roasted Shrimp & Arugula – perfect for lunch or dinner (& only 5 ingredients!)

Ingredients:
– Peeled & deveined shrimp
– Arugula
– Olive oil
– Lemon juice
– Grated parmesan cheese
– S & P

Instructions:
1. Preheat oven to 400
2. Place peeled & deveined shrimp on baking sheet
3. Add salt & pepper, drizzle with olive oil & lemon – toss!
4. Cook for 5-6 minutes
5. Drizzle arugula with olive oil & lemon juice, add grated parmesan cheese
6. Salt & pepper to taste
7. SERVE!
