Vegan Avocado Chocolate Mousse Recipe

You would never know that loads of antioxidants and healthy fats are overflowing a single serving of this chocolate mousse.

It tastes as decadent as traditional chocolate mousse, without any dairy or bad ingredients. It’s a great way to trick anyone who has a stigma about healthy foods (i.e. children) to get their daily dose of avocado and raw cacao.

This recipe is adopted from Ruby Roth’s latest cookbook: The Help Yourself Cookbook for Kids: 60 Easy Plant-Based Recipes Kids Can Make to Stay Healthy and Save the Earth, available here.

Ingredients:

2 ripe avocados, chopped & peeled
1/4 cup almond milk
1/3 cup cacao powder
1/3 cup agave nectar
1-2 tsp vanilla extract

Instructions:

1. Combine all ingredients in a food processor or high-powered blender, make sure there are no leftover avocado chunks!!
2. Cover and chill for at least 4 hours before serving

*Will last up to 3 days
