These mozzarella stuffed meatballs are easier than you might think– I use cheese sticks (AKA string cheese) as the cheese base! Keep in mind– cheese sticks with a higher fat content will yield a meatball with more ooze than a part skim or low fat variation. Both will be delicious, but just keep that in mind when purchasing ingredients. Either way, these babies are a healthy, protein packed choice! . INGREDIENTS 20 oz extra lean ground turkey breast ½ cup chopped onion ½ cup spinach ¼ cup egg whites ¼ cup oat flour 1 Tbsp garlic ½ tsp garlic powder ½ tsp salt ¼ tsp pepper 3 mozzarella cheese sticks (string cheese) . PROCEDURE ?Cut each of your mozzarella cheese sticks into 8 equal parts. Set aside. ?Mix together remaining ingredients for your meatball base until well combined (I think my hands are the best tool for the job!). ?Use a cookie scoop to scoop out some of your meat mixture (optional, but helps with consistency in size). ?Flatten out the mixture and place a mozzarella piece on top. Close the meatball around the cheese ball, pinching all of the sides shut and rolling it smooth into a ball. ?Transfer to a baking dish. Bake at 350°F for 20 minutes, turning once halfway. ?Devour warm with pasta sauce! . NUTRITION per meatball (yields 24): 48 calories | <1g carbs | <1g fat | 6g protein . INGREDIENTS 4 corn on the cobs, organic (washed and husk removed) 1/3 cup nonfat Greek yogurt 2 tsp lime juice 1 tsp diced garlic 1/2 tsp chipotle chili powder (to taste) 1/4 tsp salt (to taste) 1/8 tsp black pepper 1/4 cup chopped cilantro 1/4 cup (1 oz) queso fresco or cotija cheese (or sub feta) paprika fresh lime . PROCEDURE ? Preheat broiler (can also cook corn in a panini press/George Foreman or on a grill). ?Spray corn with cooking spray. Transfer to a baking sheet lined with foil and sprayed. ?Place in broiler for 5-7 minutes, until tops begin to brown as desired. Turn corns about 1/3 of the way and brown the tops again, and repeat once more, until you’ve done 3 rounds and the corn cobs are browned to your liking (we just want to make sure they are cooked and aren’t raw). ?While the corn cobs are cooking, mix together your remaining ingredients (except for cilantro, cheese & paprika). Adjust chili powder to taste– it can get spicy! You can also use cayenne or regular chili powder if you prefer! ?Brush the yogurt mixture all over all of the corn cobs (carefully! These babes are hot!) ?Mix together crumbled cheese and cilantro. Place it on a plate or dish and roll your hot coated corn in the mixture to coat in the cheese/cilantro. ?Sprinkle with paprika for color, and serve with fresh wedges of lime! .
